Instructions

  1. Cook the chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken, seasoning with fine sea salt and freshly-ground black pepper. Cook while breaking up the meat with a wooden spoon until fully browned and crumbled. Transfer the cooked chicken to a clean bowl and set aside.

  3. Scramble the eggs: Push the cole slaw mixture to one side of the skillet. Pour the whisked eggs into the empty space. Allow the eggs to cook until they begin to set, then gently scramble by breaking them into small pieces until fully cooked.
  4. Combine everything: Return the cooked chicken to the skillet. Add the hoisin sauce, low-sodium soy sauce, toasted sesame oil, and the green parts of the scallions.
