Ingredients

Scale

Date Caramel

  • 1 cup packed Medjool dates, pitted
  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted

Chocolate Coating

  • 1 cup chocolate chips (or an 8-ounce chocolate bar)
  • 2 teaspoons coconut oil, melted

Instructions

  1. Soak Dates: Place the pitted Medjool dates in a bowl of very hot water and soak them for 10 minutes until they become very soft. This step helps soften the dates for easier blending.
  2. Make Date Caramel: Drain the soaked dates and add them to a food processor or high-speed blender along with creamy almond butter and melted coconut oil. Pulse and blend until the mixture is completely smooth and creamy.
  3. Freeze Caramel Layer: Transfer the date caramel mixture into a 9×5-inch loaf pan lined with parchment paper. Spread evenly and place in the freezer for 2 to 3 hours until the caramel is firm to the touch.
  4. Slice Caramels: Remove the caramel block from the freezer and lift it out of the pan using the parchment paper. Place on a cutting board and slice into 12 small squares.
  5. Melt Chocolate Coating: In a heat-safe bowl, melt the chocolate chips together with 2 teaspoons of coconut oil using either a microwave or a double boiler on the stove. Stir until smooth and fully melted.
  6. Dip Caramels: Dip each caramel square fully into the melted chocolate, ensuring it is well-coated. Lift out carefully and place on a parchment-lined plate. Repeat for all caramel pieces.
  7. Set Chocolate: Transfer the chocolate-coated caramels to the refrigerator for 1 hour or until the chocolate is fully set and hardened.
  8. Enjoy and Store: Once set, enjoy your chocolate-covered date caramels immediately or keep them stored in the fridge to maintain their texture and prevent melting.

Notes

  • These date caramels are best stored in the refrigerator or freezer to prevent the chocolate from melting.
  • If left at room temperature, the chocolate coating will soften and lose its firmness.
  • You can substitute almond butter with any other nut or seed butter based on your preference or dietary needs.
  • Use high-quality dark or milk chocolate according to your taste.
  • For faster setting, place caramels in the freezer for around 30 minutes instead of the fridge.
