Ingredients

Scale

Dry Ingredients

  • 1 ½ cups (180g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract

Toppings

  • ½ cup sliced almonds
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening and seasoning.
  3. Cream butter and sugar: In a larger bowl, use a mixer to cream the softened unsalted butter and granulated sugar together for 2 to 3 minutes until the mixture is light and fluffy, which helps create a tender texture.
  4. Add eggs and extracts: Beat in the large egg, vanilla extract, and almond extract until the wet ingredients are fully combined creating a fragrant batter.
  5. Combine dry and wet ingredients: Gradually add the flour mixture to the wet ingredients and mix gently until just combined to avoid overworking the dough.
  6. Scoop the dough: Using a spoon or cookie scoop, place dollops of dough onto the prepared baking sheet, spacing each about 2 inches apart to allow for spreading. Press each dough ball slightly to flatten.
  7. Add almond topping: Gently press sliced almonds into the top of each cookie to give a lovely crunch and almond flavor.
  8. Bake: Bake the cookies for 10–12 minutes or until the edges turn a beautiful golden brown, indicating they are perfectly baked.
  9. Cool the cookies: Allow the cookies to cool on the baking sheet for 5 minutes so they can firm up, then transfer them to a wire rack to cool completely.
  10. Optional dusting: Once cooled, dust the cookies with powdered sugar for an elegant finishing touch before serving if desired.

Notes

  • Make sure the butter is softened, not melted, for proper creaming.
  • Do not overmix the dough to keep the cookies tender.
  • For extra almond flavor, you can toast the sliced almonds lightly before pressing them on top.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Powdered sugar dusting is optional but adds a pretty touch for presentation.
