Instructions

  1. Prepare: Preheat your oven to 350°F (175°C). Spray the bottom and sides of a 9-inch round cake pan with nonstick cooking spray. Cut a circle of parchment paper to fit the bottom of the pan and place it inside. Spray the parchment paper lightly to ensure the cake doesn’t stick.
  2. Beat: In a large microwave-safe mixing bowl, melt the 10 tablespoons of unsalted butter in the microwave until fully melted. Stir in 1 1/4 cups of sugar thoroughly to combine.
  3. Make Cake Batter: Add the 2 large eggs to the butter and sugar mixture. Beat the mixture vigorously for about 2 minutes or until it becomes light and creamy. Then add 1 teaspoon vanilla extract and 1 1/2 teaspoons almond extract. Gradually add 1 1/2 cups all-purpose flour and 1/2 teaspoon salt, stirring gently until just combined—do not overmix.
  4. Bake: Pour the batter evenly into the prepared cake pan. Sprinkle the 3/4 cup sliced raw almonds evenly over the top, then sprinkle 1 to 2 tablespoons of sugar over the almonds to add sweetness and texture to the topping. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool: Remove the cake from the oven and let it cool in the pan for 10 minutes. To prevent the loose almonds from falling off, place a piece of parchment paper on top of the cake, then carefully flip the cake out onto a cooling rack. Let it cool completely.
