  • 1 tbsp Balsamic Vinegar

Instructions

  1. Cook Lentils: In a saucepan, combine brown lentils and water. Bring to a boil, then reduce heat and simmer for 25-30 minutes until tender. Drain any excess liquid.
  2. Preheat Oven: Set your oven to 375°F (190°C) and line a loaf pan with parchment paper for easy removal and cleanup.
  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add chopped onion, minced garlic, diced carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened and fragrant.
  4. Prepare Flax Egg: In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to thicken, serving as a binder for the meatloaf.
