Churro Bites Dough
- 1 cup (240ml) Filtered water
- 1/2 cup (115g) Unsalted butter, cubed
- 2 tbsp (25g) Granulated sugar
- 1/2 tsp Sea salt
- 1 cup (125g) All-purpose flour, sifted
- 2 Large eggs, room temperature
- 1 tsp Pure vanilla extract
Cinnamon Sugar Coating
- 1/2 cup (100g) Granulated sugar
- 1.5 tbsp Ground cinnamon
- 3 tbsp (45g) Unsalted butter, melted
Chocolate Sauce
- 1/2 cup Semisweet chocolate chips
- 1/2 cup Heavy cream
- 1 pinch Cayenne pepper
- Boil the Water and Butter: In a heavy-bottomed saucepan over medium-high heat, combine the filtered water, cubed unsalted butter, granulated sugar, and sea salt. Bring the mixture to a rolling boil to fully incorporate the flavors and melt the butter.
- Form the Dough: Once boiling, add the sifted all-purpose flour all at once. Stir vigorously with a spatula until a thick dough forms and pulls away from the sides of the pan. Continue cooking and stirring for about 1 minute to eliminate the raw flour taste.
- Cool and Add Eggs: Transfer the dough to a bowl and allow it to cool for 3 to 5 minutes. Beat in the eggs one at a time, ensuring each is fully integrated before adding the next, then mix in the vanilla extract until the dough is smooth and velvety.
- Prepare for Baking: Preheat your oven to 425°F (220°C). Transfer the dough into a heavy-duty freezer bag or a piping bag. Snip the corner to pipe out 1-inch mounds onto a parchment-lined baking sheet, spacing them evenly.
- Bake the Churro Bites: Bake the dough mounds for 15 minutes or until they are golden brown and firm to the touch. While baking, prepare the cinnamon sugar by mixing the granulated sugar and ground cinnamon in a bowl.
- Coat with Butter and Cinnamon Sugar: Remove the churro bites from the oven. While they are still hot, brush them with melted butter and immediately toss them in the cinnamon-sugar mixture to coat them evenly.
- Make the Chocolate Sauce: Heat the heavy cream until simmering. Pour it over the semisweet chocolate chips and add a pinch of cayenne pepper. Let it sit for 1 minute, then whisk until smooth and glossy, ready for dipping.
Notes
- Use room temperature eggs to ensure they incorporate smoothly into the dough.
- Pipe the dough quickly as it firms up as it cools.
- For a spicier kick, add more cayenne pepper to the chocolate sauce, according to your preference.
- Serve the churro bites warm for the best texture and flavor.
- Leftover bites can be gently reheated in the oven to regain crispiness.
