- 1 1/2 cups cherry tomatoes (mixed colors if possible)
- 3/4 cup Kalamata olives, pitted
- 2 tablespoons extra virgin olive oil
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon crushed red pepper flakes (optional)
- Freshly ground black pepper to taste
- Preheat oven to 400°F (200°C).
- Place the block of feta in the center of a small baking dish.
- Surround the feta with cherry tomatoes and Kalamata olives.
- Drizzle olive oil over everything, then sprinkle with minced garlic, oregano, and black pepper.
- If desired, add crushed red pepper flakes for heat.
- Bake uncovered for 20–25 minutes, or until tomatoes burst and feta is golden around the edges.
- Garnish with chopped parsley and serve warm with toasted bread, pita chips, or as a topping for pasta.
