Baked Feta with Cherry Tomatoes and Kalamata Olives

This Mediterranean-inspired dish features a block of creamy feta cheese baked with juicy cherry tomatoes, briny Kalamata olives, fresh herbs, and olive oil. It’s perfect as a warm appetizer or spread on crusty bread.

Ingredients

Scale
  • 1 block feta cheese (about 7 oz)
  • 1 1/2 cups cherry tomatoes (mixed colors if possible)
  • 3/4 cup Kalamata olives, pitted
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the block of feta in the center of a small baking dish.
  3. Surround the feta with cherry tomatoes and Kalamata olives.
  4. Drizzle olive oil over everything, then sprinkle with minced garlic, oregano, and black pepper.
  5. If desired, add crushed red pepper flakes for heat.
  6. Bake uncovered for 20–25 minutes, or until tomatoes burst and feta is golden around the edges.
  7. Garnish with chopped parsley and serve warm with toasted bread, pita chips, or as a topping for pasta.

Notes

  • Use good-quality feta for the best flavor and texture.
  • Try adding sliced red onion or capers for extra tang.
  • Can be made ahead and reheated just before serving.
