Ingredients

Scale

Main Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 2 cups cooked chicken breast, diced
  • 1 head broccoli, cut into florets

Sauce Ingredients

  • 1 cup sour cream or Greek yogurt
  • 1/2 cup milk or skim milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Topping

  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook the potatoes: Boil the cubed potatoes in salted water for about 10 minutes or until tender. Drain thoroughly and set aside.
  3. Blanch the broccoli: In the same pot, bring fresh water to a boil and blanch the broccoli florets for 3 minutes. Drain and set them aside to keep vibrant and slightly crisp.
  4. Prepare the sauce: In a large bowl, combine the sour cream, milk, 1 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
  5. Combine ingredients: Gently fold the cooked potatoes, diced chicken, and blanched broccoli into the sauce mixture, ensuring everything is evenly coated. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Add the topping: Mix the breadcrumbs with the melted butter in a small bowl. Sprinkle the remaining 1 cup cheddar cheese over the casserole, then evenly distribute the breadcrumb mixture on top.
  7. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
  8. Serve: Remove from the oven and let cool for 5 minutes before serving to allow the casserole to set.

Notes

  • For a vegetarian version, omit the chicken and add extra vegetables such as mushrooms or bell peppers.
  • Substitute sour cream with Greek yogurt to lighten up the dish without sacrificing creaminess.
  • Using skim milk instead of whole milk reduces fat content.
  • Feel free to use gluten-free breadcrumbs if dietary restrictions apply.
