Instructions

  1. Prepare the sauce: In a small mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, and chili garlic sauce until smooth. Set aside.
  2. Make the wet mixture: In a separate medium bowl, whisk together the beaten egg and buttermilk until fully combined.
  3. Mix the breading: In another bowl, combine flour, panko breadcrumbs, salt, black pepper, onion powder, garlic powder, and paprika. Whisk well to evenly distribute the seasonings.
  4. Bread the shrimp: Dip each shrimp first into the flour mixture, then into the egg and buttermilk mixture, and finally back into the flour mixture, ensuring each shrimp is fully coated. Repeat this process for all shrimp.
  5. Chill the shrimp: Place the coated shrimp on a plate and refrigerate for 20 to 30 minutes. This helps the breading adhere better during frying.
  6. Heat the oil: In a deep-sided skillet, pour vegetable oil to a depth of about 2 inches. Heat over medium heat until the oil reaches 350°F (175°C).
  7. Fry the shrimp: Carefully place the shrimp into the hot oil in batches to avoid overcrowding. Fry for about 3 minutes total, turning halfway through, until golden brown and crisp. Remove shrimp with a slotted spoon and drain on paper towels.
