This Berry Croissant Bake is a delicious and easy-to-make breakfast or brunch dish featuring flaky croissant pieces, fresh mixed berries, and a creamy, sweet custard. Baked to golden perfection, it’s perfect for serving warm with a dusting of powdered sugar or a drizzle of syrup.

Ingredients

Scale

Croissant and Berries

  • 4 large croissants, broken into small pieces (use already baked croissants; not croissant dough)
  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup raspberries

Cream Cheese Mixture

  • 1 block (8 ounces) cream cheese, softened
  • 2/3 cup granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a 9 x 9-inch baking dish with cooking spray to prevent sticking.
  2. Arrange Croissants and Berries: Spread the broken croissant pieces evenly in the prepared baking dish. Distribute the sliced strawberries, blueberries, and raspberries evenly over the croissants.
  3. Make Cream Cheese Mixture: Using an electric mixer, beat the softened cream cheese until fluffy. Gradually add the granulated sugar, milk, eggs, and vanilla extract, mixing well after each addition until the mixture is smooth and well combined.
  4. Combine and Chill: Pour the cream cheese custard mixture evenly over the croissants and berries in the baking dish. Cover the dish and refrigerate for at least 15 minutes, or up to 14 hours, allowing the croissants to soak thoroughly.
  5. Bake the Casserole: Remove the cover from the baking dish and bake in the preheated oven for 35 to 40 minutes, or until the top is golden brown and the custard is set.
  6. Serve Warm: Allow the berry croissant bake to cool slightly before serving. Optionally, dust with powdered sugar or drizzle with syrup for added sweetness. Enjoy your warm, comforting breakfast dish!

Notes

  • Use baked croissants, not raw croissant dough, to achieve the right texture.
  • You can prepare this dish the night before by refrigerating it covered to let the flavors meld.
  • Feel free to substitute or add other berries like blackberries or cherries.
  • Serve with syrup, powdered sugar, or fresh whipped cream for extra indulgence.
