Berry-Topped French Toast with Yogurt Drizzle

  • 4 slices brioche or thick white bread
  • 2 eggs
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • Butter or oil for pan
  • 1/2 cup plain or vanilla Greek yogurt
  • 1 cup fresh strawberries
  • 1/2 cup fresh blueberries
  • 1 tsp powdered sugar
  • Fresh mint (optional, for garnish)

Instructions

  1. In a shallow bowl, whisk eggs, milk, vanilla, and cinnamon.
  2. Heat butter in a pan over medium heat. Dip bread slices into egg mixture, coating both sides.
  3. Cook slices 2–3 minutes per side until golden.
  4. Arrange on a plate, top with dollops or drizzle of yogurt, fresh berries, and a dusting of powdered sugar.
  5. Garnish with mint leaves and serve immediately.

Notes

  • Use whole grain bread for added fiber.
  • Chill yogurt slightly for a thicker drizzle consistency.
  • Swap Greek yogurt with flavored yogurt for extra sweetness.
  • Add maple syrup or honey if desired.
