Strawberry Glaze

  • 12 tbsp heavy cream (optional, for consistency)

Instructions

  1. Mix the Dry Ingredients: In a bowl, combine 2½ cups flour, baking powder, baking soda, and salt. Whisk thoroughly and set aside.
  2. Prepare the Wet Ingredients: In a large bowl, whisk together sugar, milk, oil, egg, and vanilla extract until the mixture is smooth and well combined.
  3. Combine Wet & Dry Mixtures: Add half of the dry ingredients to the wet ingredients and whisk lightly. Then add the remaining dry ingredients and fold gently using a spatula, avoiding overmixing to maintain a tender crumb.
  4. Prepare the Strawberries: Dice 2 cups of fresh strawberries into small pieces. Toss them with 2 tablespoons of flour to coat lightly, which prevents them from sinking in the batter.
  5. Add Strawberries to Batter: Gently fold the coated strawberries into the batter until evenly distributed.
  6. Bake the Bread: Grease a 9×5-inch loaf pan. Pour the thick batter into the pan, smoothing the top. Bake in a preheated oven at 350°F (180°C) for 50 to 60 minutes, or until the bread turns golden brown and a toothpick inserted comes out clean. Let it cool in the pan for 10 minutes.
