For the Toffee:
- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons water
For the Topping:
- 1 cup semi-sweet or milk chocolate chips
- ½ cup chopped pecans, walnuts, or almonds
- Prepare Your Pan & Ingredients: Line a 9×13-inch baking dish or baking sheet with parchment paper or a silicone mat. Measure and have all ingredients ready, as the cooking process moves quickly.
- Make the Toffee Base: In a heavy-bottomed saucepan over medium heat, melt the butter, sugar, salt, and water together. Stir constantly with a wooden spoon or silicone spatula. Continue cooking and stirring until the mixture turns a deep golden brown and reaches 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes. Remove from heat and stir in vanilla extract.
- Pour & Spread: Immediately pour the hot toffee onto the prepared baking sheet and spread evenly with a spatula. Let it sit for 1-2 minutes until it begins to firm up slightly.
- Add the Chocolate: While still warm, sprinkle the chocolate chips evenly over the toffee. Allow them to sit for about 2 minutes to melt, then spread the melted chocolate evenly with a spatula.
- Sprinkle the Nuts: Sprinkle chopped nuts over the melted chocolate and gently press them in to adhere.
- Let It Set & Break Into Pieces: Allow the toffee to cool at room temperature for 2 hours, or chill in the fridge for 30 minutes to speed hardening. Once firm, break into bite-sized pieces and enjoy.
Notes
- Storage: Keep toffee in an airtight container at room temperature for up to 2 weeks or refrigerate for up to one month.
- Gift Idea: Package in decorative bags for a personalized homemade gift.
- Nut-Free Version: Omit nuts or substitute with toffee bits or a sprinkle of sea salt.
- Chocolate Variations: Try white chocolate, dark chocolate, or a mix for different flavor combinations.
