Ingredients

Scale

For the Crumble Topping and Base:

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 3/4 cup unsalted butter, cut into small cubes
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 1 teaspoon apple cider vinegar

For the Blackberry Filling:

  • 4 cups blackberries (fresh or frozen)
  • 1/3 cup granulated sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons lemon juice (about half a medium lemon)
  • 1 teaspoon lemon zest

Instructions

  1. Preheat Oven: Preheat your oven to 375°F and position a rack in the center to ensure even baking.
  2. Prepare Crumble Dough: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut the cold butter into the flour mixture using a pastry cutter, two forks, or your fingers until it resembles coarse crumbs. Mix in the vanilla extract, egg, and apple cider vinegar until the dough forms and is well combined.
  3. Form Base Layer: Take half of the crumble dough and press it evenly into the bottom of a 2-quart baking dish or deep-dish pie pan, creating a firm, even layer.
  4. Mix Blackberry Filling: In another bowl, combine blackberries, sugar, and cornstarch. Toss gently to coat. Add lemon juice and lemon zest, stirring to combine evenly.
  5. Assemble Crumble: Spread the blackberry mixture evenly over the dough base in the baking dish. Sprinkle and clump the remaining crumble dough over the fruit filling to form the top layer.
  6. Bake: Place the baking dish in the oven and bake for 40 to 45 minutes, or until the crumble topping is lightly browned and crisp.
  7. Cool and Serve: Remove the crumble from the oven and let it cool on a wire rack for about 30 minutes. Serve warm, optionally with a scoop of ice cream.

Notes

  • Use fresh or frozen blackberries as available; frozen berries do not require thawing before mixing.
  • For added flavor, you can sprinkle a little cinnamon into the blackberry filling.
  • Make sure the butter is cold when cutting into the flour to ensure a crumbly texture.
  • The crumble is best served warm but can be stored in the refrigerator and gently reheated before serving.
  • If you want a gluten-free version, substitute the all-purpose flour with a 1-to-1 gluten-free baking flour blend.
