Blueberry Cream Cheese Crumb Bars

Luscious dessert bars with a buttery crumb crust, tangy cream cheese filling, and sweet-tart blueberry topping. Baked to golden perfection for a rich, fruity, and creamy treat.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Berry Layer:

  • 1 1/2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, cream together butter and sugar until light. Add vanilla, salt, baking powder, and flour. Mix until crumbly.
  3. Press 2/3 of the dough into the prepared pan for the base.
  4. In a separate bowl, beat cream cheese with sugar, egg, and vanilla until smooth. Spread over the crust.
  5. Toss blueberries with cornstarch, lemon juice, and sugar. Sprinkle evenly over the cream cheese layer.
  6. Crumble the remaining dough on top.
  7. Bake for 40–45 minutes, or until the top is golden and set.
  8. Cool completely before slicing and serving.

Notes

  • Bars can be made a day ahead and stored in the refrigerator.
  • Use frozen blueberries if fresh are not available (do not thaw).
  • Lining the pan with parchment helps remove bars easily.
  • Chill before slicing for clean edges.
