- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
Cream Cheese Filling:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
Berry Layer:
- 1 1/2 cups fresh blueberries
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons sugar
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- In a large bowl, cream together butter and sugar until light. Add vanilla, salt, baking powder, and flour. Mix until crumbly.
- Press 2/3 of the dough into the prepared pan for the base.
- In a separate bowl, beat cream cheese with sugar, egg, and vanilla until smooth. Spread over the crust.
- Toss blueberries with cornstarch, lemon juice, and sugar. Sprinkle evenly over the cream cheese layer.
- Crumble the remaining dough on top.
- Bake for 40–45 minutes, or until the top is golden and set.
- Cool completely before slicing and serving.
Notes
- Bars can be made a day ahead and stored in the refrigerator.
- Use frozen blueberries if fresh are not available (do not thaw).
- Lining the pan with parchment helps remove bars easily.
- Chill before slicing for clean edges.
