Blueberry Compote
- 100 g Blueberries (fresh or frozen)
- 20 g Sugar
- 1 tsp Lemon juice
- Zest of ½ lemon
Frosting
- 250 g (1 cup) Mascarpone cheese – cold
- 220 ml (1 cup) Heavy cream – full-fat and cold
- 65 ml (1/4 cup) Blueberry compote (prepared)
- 3 tbsp Powdered sugar
- 1 tsp Vanilla extract
- Prepare Blueberry Compote: Place the blueberries, sugar, lemon juice, and lemon zest into a small saucepan.
- Cook Compote: Cook the mixture over low heat for about 10 to 12 minutes, stirring regularly, until it becomes thick and syrupy.
- Blend Compote: Use a food processor or hand blender to blend the cooked blueberries until smooth.
- Strain Compote: Pass the puree through a fine sieve to remove skins and seeds for a smooth texture.
- Cool Compote: Let the strained blueberry puree cool completely in the refrigerator before use.
- Make Blueberry Frosting: In a large mixing bowl, combine the cold mascarpone cheese, cold heavy cream, blueberry compote, powdered sugar, and vanilla extract.
- Mix Frosting: Using an electric or stand mixer fitted with a whisk attachment, beat on medium speed for 2 to 3 minutes until the mixture is thick, smooth, and creamy.
- Use or Store: Use the frosting immediately to decorate cakes or cupcakes, or cover and refrigerate for later use.
