Instructions

  1. Cook the Quinoa: Rinse quinoa under cold running water to remove any bitterness. Place quinoa in a pot with 2 cups of water, bring to a boil, then reduce heat to a simmer for about 15 minutes or until water is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for a few minutes.
  2. Cook the Chicken: Heat extra virgin olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper. Add chicken to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through.
  3. Sauté Broccoli: In the last 3 minutes of cooking the chicken, add the fresh broccoli florets directly to the skillet to sauté alongside the chicken until tender-crisp.
  4. Prepare Herb Dressing: In a small bowl, whisk together minced garlic, chopped parsley and basil, lemon juice, honey (or maple syrup), salt, and pepper until well combined.
  5. Assemble the Bowl: In a large bowl, combine the cooked quinoa, sautéed chicken and broccoli. Drizzle with the herb dressing and toss thoroughly to coat all ingredients evenly.
  6. Serve: Serve the quinoa bowl warm, garnished with extra fresh herbs if desired.
