These Buffalo Chicken Egg Rolls are a crispy, flavorful appetizer that combines spicy buffalo chicken with creamy cheeses and ranch seasoning, all wrapped in a crunchy egg roll wrapper and air fried to golden perfection. Perfect for game day or any occasion, they’re served with ranch or blue cheese dressing for dipping.

  • 2 cups (280 g) rotisserie chicken, finely diced
  • 4 ounces cream cheese, softened
  • ¼ cup buffalo sauce, plus extra for serving
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix

Assembly and Serving

  • 8 egg roll wrappers
  • Water, for assembly
  • Nonstick cooking spray, for air frying
  • Ranch dressing or blue cheese dressing, for serving

Instructions

  1. Prepare the filling: In a large bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir thoroughly until all ingredients are evenly blended.
  2. Fill the egg roll wrappers: Place one egg roll wrapper on a clean surface. Spoon approximately ⅓ cup of the buffalo chicken mixture onto the center of the wrapper.
  3. Roll the egg rolls: Lightly wet the edges of the wrapper with water to help seal. Fold the bottom corner over the filling, then fold in the right and left corners toward the center, pressing lightly to seal. Roll the wrapper tightly upward until the filling is completely enclosed and the edges are securely sealed.
  4. Preheat the air fryer: Set your air fryer to 400°F (204°C) and allow it to preheat.
  5. Air fry the egg rolls (in batches if needed): Place the prepared egg rolls in the air fryer basket, making sure they do not overlap. Spray the tops of the egg rolls lightly with nonstick cooking spray. Air fry for 3-4 minutes, then carefully flip them over, spray the other side, and continue air frying for an additional 3-4 minutes or until the egg rolls are golden brown and crispy.
  6. Serve: Remove the egg rolls from the air fryer and serve hot with ranch dressing, blue cheese dressing, and additional buffalo sauce on the side for dipping.

Notes

  • If you don’t have a rotisserie chicken, cooked shredded chicken or leftover cooked chicken works well.
  • For extra crispiness, make sure the egg rolls are sprayed well with cooking spray before air frying.
  • Work in batches if your air fryer basket cannot hold all egg rolls at once to ensure even cooking.
  • These egg rolls can be frozen before air frying. To cook from frozen, add a couple of extra minutes per side in the air fryer.
  • Use gloves or a brush to spread the egg wash or water for sealing to prevent the wrapper from tearing.
