Ingredients

Scale

Batter Ingredients

  • 1 large egg
  • 1/2 cup light brown sugar (packed)
  • 1/3 cup canola or vegetable oil
  • 2 teaspoons granulated sugar
  • 1/4 cup sour cream (lite is okay; or Greek yogurt may be substituted)
  • 1 tablespoon instant espresso granules
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (or to taste)
  • 1 cup mashed ripe bananas (from about 2 medium/large or 3 small bananas)
  • 1/4 cup caramel or salted caramel sauce (use a thick caramel sauce, not a thin and runny ice cream sundae sauce)

Glaze Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons light brown sugar (packed, 1/4 cup + 2 tablespoons)
  • 1 teaspoon vanilla extract
  • Pinch salt (optional and to taste)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F. Thoroughly spray one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan, or line it with a parchment paper sling and spray the paper. Set the pan aside.
  2. Mix Wet Ingredients: In a large bowl, whisk together the egg, light brown sugar, canola or vegetable oil, granulated sugar, sour cream (or Greek yogurt), instant espresso granules, and vanilla extract until combined.
  3. Combine Dry Ingredients: Add the all-purpose flour, baking powder, baking soda, and salt to the wet mixture. Stir gently just until combined; avoid overmixing to keep the bread tender.
  4. Add Bananas: Fold in the mashed ripe bananas until evenly distributed throughout the batter.
  5. Transfer Batter to Pan: Pour the batter into the prepared loaf pan and smooth the top lightly with a spatula.
  6. Add Caramel Swirl: Evenly drizzle the thick caramel or salted caramel sauce over the batter, leaving a margin near the edges to prevent burning. Using a butter knife, gently swirl the caramel about 1 inch into the batter, being careful not to touch the pan edges or bottom.
  7. Bake Bread: Bake in the preheated oven for 45 to 50 minutes, or until the center is set and a toothpick inserted comes out clean or with a few moist crumbs but no wet batter.
  8. Cool Bread: Let the bread cool in the pan on a wire rack while you prepare the glaze.
  9. Make Glaze: In a small saucepan over medium-high heat, melt the unsalted butter. Add the light brown sugar, vanilla extract, and optional pinch of salt, whisking to combine as the sugar dissolves.
  10. Simmer Glaze: Reduce heat to low and allow the mixture to simmer gently for 3 minutes. The glaze should have a dimpled surface and very gentle bubbling; no stirring needed.
  11. Cool and Drizzle Glaze: Let the glaze cool to a warm temperature for about 5 minutes, then drizzle it evenly over the banana bread. You may glaze the bread while it remains in the pan or transfer it to a wire rack for glazing.
  12. Set Glaze: Allow the glaze to fully set for about 1 hour before slicing and serving to enjoy the best texture and flavor.

Notes

  • Use a thick caramel sauce rather than a thin, runny ice cream sundae sauce for the swirl to avoid burning during baking.
  • Be careful when swirling the caramel to keep it away from the edges and bottom of the pan to prevent sticking and burning.
  • If you prefer, Greek yogurt can be substituted for sour cream in the batter for a lighter tang.
  • The glaze can be drizzled over the bread either while it’s still warm in the pan or after removing it; choose whichever is easier for you.
  • This bread is best served once the glaze has fully set to avoid messy slices.
