- For the crust:
 
- 1 1/4 cups all-purpose flour
 
- 1/2 tsp salt
 
- 1/2 cup unsalted butter, cold and cubed
 
- 3–4 tbsp ice water
 
- For the filling:
 
- 2 large yellow onions, thinly sliced
 
- 1 tbsp olive oil
 
- 1 tbsp unsalted butter
 
- 1/2 tsp sugar
 
- 1/4 tsp salt
 
- 4 oz goat cheese, crumbled
 
- 1/4 cup heavy cream
 
- 1 egg

- Make the crust: In a bowl, combine flour and salt. Cut in the butter until mixture resembles coarse crumbs. Gradually add ice water, mixing just until dough holds together. Form into a disk, wrap, and refrigerate for 30 minutes.
 
- Preheat oven to 375°F (190°C).
 
- Roll out dough on a floured surface and cut to fit 6 mini tart pans (or a muffin tin). Press into pans and prick bottoms with a fork. Bake for 10 minutes, then set aside.
 
- Caramelize onions: Heat olive oil and butter in a skillet over medium heat. Add onions, sugar, and salt. Cook for 20–25 minutes, stirring often, until golden and soft. Remove from heat.
 
- In a bowl, whisk together cream and egg. Add half of the goat cheese and mix gently.
 
- Spoon caramelized onions into each tart shell, top with cream mixture, then sprinkle remaining goat cheese over each.
 
- Bake for 18–22 minutes or until the filling is set and golden.
 
- Garnish with fresh thyme and serve warm or at room temperature.
