Caramelized Onion, Blueberry & Goat Cheese Flatbread

A sweet and savory flatbread topped with tangy goat cheese, juicy blueberries, and golden caramelized onions – perfect as an appetizer or elegant light meal, bursting with flavor and texture.

  • 1 prepared flatbread or naan
  • 1/2 cup crumbled goat cheese
  • 1/2 cup fresh blueberries
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze or honey (optional)
  • 1/2 teaspoon dried thyme
  • Fresh parsley or basil, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil and sliced onions. Cook, stirring occasionally, until onions are soft and golden, about 15–20 minutes.
  3. Place flatbread on a baking sheet. Spread the caramelized onions evenly over the top.
  4. Scatter blueberries and crumbled goat cheese across the flatbread. Sprinkle with dried thyme, salt, and pepper.
  5. Bake for 8–10 minutes, or until the edges are crispy and the cheese is slightly melted.
  6. Drizzle with balsamic glaze or honey, if desired, and garnish with fresh herbs.
  7. Slice and serve warm.

Notes

  • Use store-bought caramelized onions for quicker prep.
  • Add a handful of arugula after baking for extra freshness.
  • Can substitute feta or ricotta for goat cheese if preferred.
