- 1 lb chicken breast, cut into cubes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup shredded cheddar or cheese slices (for melting)
- Chopped parsley (for garnish)
- Wooden skewers (soaked if grilling)
- 3 medium russet potatoes, cut into fries
- 1 tablespoon olive oil
- Salt to taste
- 1 cup chopped lettuce
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup cubed feta or mozzarella
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Toss chicken cubes in olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. Thread onto skewers and let marinate for 15 minutes.
- Heat a grill pan or skillet over medium-high. Grill chicken skewers for 8–10 minutes, turning occasionally until fully cooked.
- Add cheese over the top while still hot and cover with a lid to melt, or place under broiler for 2 minutes. Garnish with parsley.
- Toss potato fries with olive oil and a pinch of salt. Bake at 425°F (220°C) for 25–30 minutes or until golden and crispy, flipping halfway.
- Mix lettuce, cucumber, tomato, and feta in a bowl. Stir in mayonnaise (or yogurt), lemon juice, salt, and pepper.
- Plate skewers with fries and salad for serving.
