Cheesy Chicken Skewers with Fries and Creamy Chopped Salad

Juicy grilled chicken skewers smothered in melted cheese, served with crispy homemade fries and a refreshing creamy cucumber-tomato salad. A hearty, comforting plate full of color and flavor.

  • 1 lb chicken breast, cut into cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar or cheese slices (for melting)
  • Chopped parsley (for garnish)
  • Wooden skewers (soaked if grilling)
  • 3 medium russet potatoes, cut into fries
  • 1 tablespoon olive oil
  • Salt to taste
  • 1 cup chopped lettuce
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup cubed feta or mozzarella
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Toss chicken cubes in olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. Thread onto skewers and let marinate for 15 minutes.
  2. Heat a grill pan or skillet over medium-high. Grill chicken skewers for 8–10 minutes, turning occasionally until fully cooked.
  3. Add cheese over the top while still hot and cover with a lid to melt, or place under broiler for 2 minutes. Garnish with parsley.
  4. Toss potato fries with olive oil and a pinch of salt. Bake at 425°F (220°C) for 25–30 minutes or until golden and crispy, flipping halfway.
  5. Mix lettuce, cucumber, tomato, and feta in a bowl. Stir in mayonnaise (or yogurt), lemon juice, salt, and pepper.
  6. Plate skewers with fries and salad for serving.

Notes

  • Soaking wooden skewers prevents burning if using a grill.
  • Use Greek yogurt for a lighter, tangier salad dressing.
  • Try using different cheeses like Monterey Jack or mozzarella for variation.
  • Sweet potatoes can be substituted for regular fries for a healthier twist.
