Cheesy Spinach Cauliflower Patties

Golden-brown, cheesy cauliflower patties loaded with spinach—crispy on the outside, tender on the inside, and perfect as a low-carb snack, side dish, or vegetarian meal base.

  • 2 cups cauliflower florets (steamed and mashed)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup chopped spinach (fresh or frozen and thawed)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease it with olive oil.
  2. Steam cauliflower florets until tender. Let cool slightly and mash or rice them using a fork or processor.
  3. Place cauliflower in a clean towel or cheesecloth and squeeze out as much moisture as possible.
  4. In a large bowl, mix mashed cauliflower, mozzarella, Parmesan, spinach, egg, garlic powder, onion powder, salt, and pepper.
  5. Scoop the mixture into small rounds and shape into flat patties on the baking sheet.
  6. Bake for 20–25 minutes, flipping halfway through, until golden brown and crisp on both sides.
  7. Let cool for a few minutes before serving.

Notes

  • Ensure cauliflower is well-drained to avoid soggy patties.
  • Use an ice cream scoop for evenly sized patties.
  • Serve with sour cream or a yogurt-based dip for extra flavor.
