Cherry Tomato & Goat Cheese Mini Tarts

Golden flaky tart shells filled with creamy goat cheese, blistered cherry tomatoes, and fresh basil—an elegant yet simple appetizer bursting with flavor and vibrant color.

  • 1 sheet puff pastry or 12 mini tart shells
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/2 teaspoon balsamic glaze (optional)
  • 3/4 cup goat cheese, softened
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. If using puff pastry, cut into rounds and press into mini tart pans or muffin tins. Prick the bottoms with a fork.
  3. Bake for 10–12 minutes or until lightly golden. Let cool slightly.
  4. Meanwhile, heat olive oil in a skillet over medium heat. Add cherry tomatoes, sprinkle with salt and pepper, and cook until skins blister and begin to burst, about 5–6 minutes.
  5. Spoon goat cheese into each tart shell and gently press to spread.
  6. Top with blistered cherry tomatoes and a drizzle of balsamic glaze if desired.
  7. Garnish with fresh basil leaves and serve warm or at room temperature.

Notes

  • Puff pastry should be kept chilled until ready to use for best results.
  • Use a mix of red and yellow cherry tomatoes for extra color.
  • These tarts can be made ahead and reheated gently before serving.
