- 1 sheet puff pastry or 12 mini tart shells
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon cracked black pepper
- 1/2 teaspoon balsamic glaze (optional)
- 3/4 cup goat cheese, softened
- Fresh basil leaves, for garnish
- Preheat oven to 400°F (200°C).
- If using puff pastry, cut into rounds and press into mini tart pans or muffin tins. Prick the bottoms with a fork.
- Bake for 10–12 minutes or until lightly golden. Let cool slightly.
- Meanwhile, heat olive oil in a skillet over medium heat. Add cherry tomatoes, sprinkle with salt and pepper, and cook until skins blister and begin to burst, about 5–6 minutes.
- Spoon goat cheese into each tart shell and gently press to spread.
- Top with blistered cherry tomatoes and a drizzle of balsamic glaze if desired.
- Garnish with fresh basil leaves and serve warm or at room temperature.
Notes
- Puff pastry should be kept chilled until ready to use for best results.
- Use a mix of red and yellow cherry tomatoes for extra color.
- These tarts can be made ahead and reheated gently before serving.
