Ingredients

Scale

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature (113g)
  • 1 large egg, room temperature (56g)
  • 1 tsp vanilla extract or vanilla bean paste (4g)

Dry Ingredients

  • 1 cup packed light brown sugar (200g)
  • 1 cup old fashioned oats (96g)
  • 1 Tbsp + 1 tsp all-purpose flour (12g)
  • 1/2 tsp fine salt (3g)

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 375ºF (190ºC) and line up to four large baking sheets with silicone mats or parchment paper to prevent sticking.
  2. Melt Butter and Brown Sugar: In a large frying pan over medium heat, add the butter and brown sugar. Stir frequently until the butter fully melts and the mixture is smooth with no clumps remaining. It’s fine if not fully combined at this stage.
  3. Add Oats, Flour, and Salt: Stir in the old fashioned oats, all-purpose flour, and salt. Mix thoroughly to ensure the oats are well coated in the butter and brown sugar mixture.
  4. Add Egg and Vanilla: Incorporate the egg and vanilla extract into the mixture, stirring until the batter is fully combined and slightly thin or soupy.
  5. Portion the Batter: Drop 1 teaspoon-sized dollops of batter onto the baking sheets, spacing each cookie at least 2 inches apart to allow spreading.
  6. Bake the Cookies: Bake two trays at a time for 5-7 minutes. The exact baking time varies; for chewy cookies, remove them when edges just start to brown (around 6 1/2 minutes). For crisper edges, bake until edges are golden brown.
  7. Repeat Baking Process: Once the first two trays are done, place the next batch into the oven. Monitor closely as baking times can vary depending on batter temperature and cookie size.
  8. Shape Cookies if Needed: If cookies spread unevenly, use a large cookie cutter or glass to gently reshape cookies into circles while still warm.
  9. Cool the Cookies: Let cookies cool on the baking sheets for 15 minutes to set, then transfer to wire racks to cool completely.
  10. Store or Freeze: Store cooled cookies in an airtight container at room temperature for up to 5 days or freeze in airtight containers or freezer bags for up to one month.

Notes

  • For chewier cookies, pull them out of the oven just as the edges begin to brown.
  • If you prefer crispier edges, bake until edges are fully golden and crisp.
  • Spacing cookies at least 2 inches apart allows for natural spreading without merging.
  • Using parchment paper or silicone mats prevents sticking and promotes even baking.
  • Room temperature ingredients help the batter mix evenly and produce consistent cookies.
  • The batter is fairly thin and soupy; do not be alarmed as it spreads during baking.
  • Cookies can be reshaped with a cutter while warm to maintain neat rounds.
  • Freezing baked cookies preserves freshness and texture; thaw at room temperature before serving.
