For the Chicken and Garlic Gravy
- 2 boneless skinless chicken breasts or thighs
- 6 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups chicken broth
- ¼ cup heavy cream (optional)
- Salt and pepper, to taste
For the Cheesy Mashed Potatoes
- 2 pounds Yukon Gold potatoes, peeled and cubed
- ½ cup milk
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper, to taste
For Garnish
- 1 tablespoon chopped fresh parsley or chives
- Season and Sear the Chicken: Season the chicken breasts or thighs generously with salt and pepper. Heat oil in a skillet over medium-high heat and sear the chicken until golden brown and cooked through, reaching an internal temperature of 165°F. Remove the chicken from the skillet and set aside, keeping it warm.
- Sauté Garlic: Reduce the heat to medium. In the same skillet, melt 2 tablespoons of butter and add the minced garlic. Sauté for about 1 minute until the garlic is fragrant but not browned.
- Make the Roux: Stir in the 2 tablespoons of all-purpose flour into the melted butter and garlic mixture to create a roux. Cook this mixture for 1 to 2 minutes, stirring constantly to avoid lumps and achieve a light golden color.
- Prepare the Gravy: Gradually whisk in the 1 ½ cups of chicken broth, making sure to break up any lumps formed by the flour. Allow the mixture to simmer until it thickens to a gravy-like consistency. Stir in the optional ¼ cup heavy cream if using, and season the gravy with salt and pepper to taste.
- Boil the Potatoes: Place the peeled and cubed Yukon Gold potatoes in salted boiling water. Boil them for 12 to 15 minutes or until they are tender when pierced with a fork. Drain the potatoes well.
- Mash the Potatoes: Mash the drained potatoes with 2 tablespoons of butter, ½ cup milk, and 1 cup shredded cheddar cheese. Mix until smooth and creamy. Season with salt and pepper to taste.
- Plate and Serve: Spoon the cheesy mashed potatoes onto plates, top with sliced seared chicken, and generously pour the garlic gravy over the top. Garnish with freshly chopped parsley or chives and serve immediately.
Notes
- For a lighter gravy, omit the heavy cream or substitute with a lighter cream or milk.
- Yukon Gold potatoes are recommended for their creamy texture, but russet potatoes can be used as a substitute.
- Make sure not to overcook the chicken to keep it juicy and tender.
- Use fresh garlic for the best flavor in the gravy; avoid pre-minced garlic for a more robust taste.
- The dish pairs well with steamed vegetables or a fresh green salad for a complete meal.
