Ingredients

Scale

For the Chicken Koftas

  • 500 grams ground chicken
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil (for grilling)

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt

Instructions

  1. Prepare the Kofta Mixture: In a large bowl, combine ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and ground black pepper. Mix everything thoroughly until well combined to ensure the flavors are evenly distributed.
  2. Shape the Koftas: Form the chicken mixture into small oval-shaped koftas, approximately the size of a meatball but elongated. This shape ensures even cooking on the grill.
  3. Preheat and Oil the Grill: Preheat your grill to medium-high heat, then brush the grill grates with olive oil to prevent the koftas from sticking during cooking.
  4. Grill the Koftas: Place the koftas on the grill and cook for about 10-12 minutes, turning them occasionally to ensure they cook evenly and develop a nice charred exterior. Cook until the internal temperature reaches 165°F (74°C) and the meat is no longer pink.
  5. Prepare the Garlic Yogurt Sauce: In a separate bowl, mix the plain yogurt with freshly squeezed lemon juice and a pinch of salt. Stir well until the sauce is smooth and tangy, perfect for complementing the smoky koftas.
  6. Serve: Plate the grilled chicken koftas and serve them immediately with the garlic yogurt sauce on the side for dipping or drizzling.

Notes

  • For added flavor, consider marinating the kofta mixture for 30 minutes before shaping and grilling.
  • You can use a stovetop grill pan if a traditional grill is not available.
  • Adjust spice levels according to your taste; adding chili powder or cayenne can give it a spicy kick.
  • Make sure the koftas are cooked through by checking the internal temperature with a meat thermometer.
  • Fresh parsley can be substituted with cilantro for a different herbal note.
