  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 1/2 cups cooked shredded chicken (rotisserie or poached)
  • 3/4 cup uncooked orzo pasta
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and black pepper, to taste
  • Juice of 1/2 lemon (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until vegetables are softened.
  2. Stir in garlic, thyme, and parsley. Cook for 1 more minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add orzo pasta and simmer uncovered for 8–10 minutes, or until orzo is tender.
  5. Stir in shredded chicken and simmer for another 2–3 minutes until heated through.
  6. Season with salt, black pepper, and lemon juice if using.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Use rotisserie chicken for convenience and added flavor.
  • Add a parmesan rind during simmering for extra depth.
  • For a thicker soup, reduce broth slightly or mash some of the vegetables.
  • This soup stores well in the fridge for up to 4 days and freezes beautifully.
