Chocolate-Covered Almond Butter Stuffed Dates

Medjool dates filled with creamy almond butter and a touch of cinnamon, dipped in dark chocolate and topped with flaky sea salt—an easy, no-bake treat that’s sweet, salty, and satisfyingly chewy.

  • 12 Medjool dates, pitted
  • 1/3 cup almond butter (or nut butter of choice)
  • 1/2 teaspoon cinnamon (optional)
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil
  • Flaky sea salt, for garnish

Instructions

  1. Slice each date lengthwise to create an opening without cutting all the way through.
  2. In a small bowl, mix almond butter with cinnamon if using.
  3. Fill each date with about 1 teaspoon of almond butter. Press gently to close.
  4. In a microwave-safe bowl or over a double boiler, melt the chocolate and coconut oil until smooth.
  5. Dip each stuffed date into the melted chocolate, coating it fully. Place on a parchment-lined tray.
  6. Drizzle with extra chocolate if desired and sprinkle with flaky sea salt.
  7. Chill in the fridge for 15–20 minutes or until the chocolate sets.
  8. Store in an airtight container in the fridge.

  • Use natural almond butter for a smoother texture and richer flavor.
  • Try other nut butters like peanut or cashew for variety.
  • Can be made ahead and stored up to a week in the fridge.
  • Add chopped nuts or coconut flakes on top for extra texture.
