- 1 1/2 cups unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup mini dark chocolate chips
- 1 tablespoon chia seeds (plus more for garnish)
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 cup dark chocolate chips (for coating)
- 1 teaspoon coconut oil (for melting chocolate)
- In a mixing bowl, combine shredded coconut, almond flour, maple syrup, melted coconut oil, mini chocolate chips, chia seeds, vanilla, and salt. Stir until well mixed and sticky.
- Scoop about 1 tablespoon of mixture and shape into small disks or balls. Place on a parchment-lined tray.
- Freeze for 15–20 minutes until firm.
- Melt dark chocolate chips with 1 teaspoon coconut oil in a double boiler or microwave until smooth.
- Dip each coconut bite into the melted chocolate, coating evenly. Return to the tray and sprinkle with chia seeds.
- Refrigerate until set, about 10 minutes. Store chilled.
