Chocolate-Dipped Coconut Chia Bites

No-bake coconut chia bites made with almond flour, maple syrup, and mini chocolate chips, dipped in rich dark chocolate and sprinkled with chia seeds. A healthy, indulgent snack or dessert with the perfect balance of texture and flavor.

  • 1 1/2 cups unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup mini dark chocolate chips
  • 1 tablespoon chia seeds (plus more for garnish)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup dark chocolate chips (for coating)
  • 1 teaspoon coconut oil (for melting chocolate)

Instructions

  1. In a mixing bowl, combine shredded coconut, almond flour, maple syrup, melted coconut oil, mini chocolate chips, chia seeds, vanilla, and salt. Stir until well mixed and sticky.
  2. Scoop about 1 tablespoon of mixture and shape into small disks or balls. Place on a parchment-lined tray.
  3. Freeze for 15–20 minutes until firm.
  4. Melt dark chocolate chips with 1 teaspoon coconut oil in a double boiler or microwave until smooth.
  5. Dip each coconut bite into the melted chocolate, coating evenly. Return to the tray and sprinkle with chia seeds.
  6. Refrigerate until set, about 10 minutes. Store chilled.

Notes

  • Use mini muffin liners to shape and portion bites easily.
  • Add a dash of cinnamon or orange zest for flavor variation.
  • Use sugar-free chocolate chips for a lower sugar option.
  • Store in an airtight container in the fridge for up to a week.
