  • For the Muffins:
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • For the Nut Streusel:
  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans
  • 2 tablespoons chopped pistachios
  • 3 tablespoons cold butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, eggs, buttermilk, oil, and vanilla extract until smooth.
  4. Add wet ingredients to dry ingredients and mix until just combined. Fold in chocolate chips.
  5. To make the streusel, combine flour, brown sugar, chopped pecans, chopped pistachios, and cold butter in a small bowl. Use your fingers or a fork to crumble the butter into the mixture until coarse and crumbly.
  6. Divide the muffin batter evenly among the liners in the muffin tin.
  7. Top each muffin with a generous spoonful of the streusel mixture.
  8. Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra crunch, sprinkle a few extra chopped nuts on top before baking.
  • Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
  • Swap out the nuts in the streusel for your favorites like walnuts or almonds if desired.
