Instructions

  1. Prepare equipment: Line a small, flat dish (about 13 x 18 cm or 7 x 5 inches) with non-stick baking paper. Add the chocolate sprinkles to a small bowl and set aside. Line a baking tray with non-stick baking paper as well and set it aside for placing the truffles later.
  2. Heat cream and zest: In a small saucepan, combine the thickened cream and finely grated orange zest. Heat over low heat just until the cream reaches just below boiling point, ensuring the zest infuses the cream with its aroma.
  3. Melt chocolate: Remove the saucepan from heat and immediately add the finely chopped dark chocolate. Stir continuously until the chocolate is completely melted and the mixture is smooth and glossy.
  4. Chill ganache: Pour the chocolate and cream mixture into the prepared dish. Cover and refrigerate for about 2 hours, or until the mixture is firm enough to shape into balls.
  5. Form truffles: Using a small ice cream scoop or a teaspoon, scoop about 3 level teaspoons of the chilled mixture. Roll it quickly into small compact balls with your hands. If the mixture is too firm, let it sit at room temperature for 5-10 minutes to soften slightly before rolling.
  6. Keep hands cool: To prevent the truffles from melting while shaping, keep an ice pack or a pack of frozen peas nearby to cool your hands frequently. Have paper towels ready to dry your hands as needed.
  7. Coat truffles: Toss each chocolate ball into the bowl of chocolate sprinkles, gently moving the bowl around to ensure an even and complete coating.
  8. Chill truffles: Place the coated truffles on the prepared baking tray lined with baking paper. Refrigerate for at least 30 minutes to firm up before serving.
  9. Store properly: Store truffles in an airtight container in the refrigerator for up to one week. When layering the truffles, separate each layer with sheets of non-stick baking paper to prevent sticking.
