Instructions

  1. Prepare the Peanut Butter Mixture: In a large bowl, thoroughly mix together the peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and well combined, ensuring the mixture can hold its shape.
  2. Form the Balls: Using your hands or a spoon, shape the peanut butter mixture into approximately 25 equal-sized balls, arranging them on a clean plate or tray.
  3. Melt the Chocolate: Set up a double boiler by placing a heatproof bowl over a pot of simmering water. Add the chocolate chips and coconut oil to the bowl and stir continuously until the chocolate is fully melted and smooth.
  4. Coat the Balls: Dip each peanut butter ball into the melted chocolate, making sure it is fully coated. Place the coated balls on a lined rimmed sheet pan to collect any drips.
  5. Add Sprinkles & Chill: If desired, sprinkle the coated balls with sprinkles for decoration. Transfer the tray to the freezer and chill for about 30 minutes until the chocolate coating is set and firm.
