Bread Rolls

  • soft white sandwich bread, 6 slices (crusts removed)

Custard

  • 3 large free-range eggs
  • 125ml whole milk
  • 60ml double cream
  • 1 tsp vanilla extract

Cooking

  • 1 tbsp unsalted butter
  • 1 tbsp vegetable oil

Glaze

  • 100g full-fat cream cheese, softened
  • 80g icing sugar, sifted
  • 1/2 tsp vanilla extract
  • 1 tbsp whole milk (plus extra as needed)

Instructions

  1. Prepare Filling & Rolls: In a small bowl, mix 60g softened butter with brown sugar and ground cinnamon until it forms a smooth paste. Remove the crusts from the bread slices and flatten each slice using a rolling pin. Evenly spread the cinnamon sugar butter mixture on each slice, then tightly roll up each slice. Slice each rolled bread log into 3-4 pinwheels.
  2. Create Custard & Soak Rolls: In a shallow dish, whisk together the eggs, whole milk, double cream, and 1 tsp vanilla extract until well combined. Briefly dip each bread roll pinwheel into the custard mixture for about 10-15 seconds on each side, ensuring they soak up some custard but do not become soggy.
  3. Cook the Rolls: Heat 1 tbsp butter and 1 tbsp vegetable oil in a large non-stick frying pan over medium-low heat. Working in batches, place the soaked rolls seam-side down and cook for 2-3 minutes on each side, until they are golden brown and cooked through. Once done, transfer the rolls to a wire rack to avoid sogginess.
  4. Make Glaze & Serve: In a medium bowl, beat the softened cream cheese until smooth and creamy. Gradually add and beat in the sifted icing sugar, followed by 1/2 tsp vanilla extract and 1 tbsp whole milk. Adjust the consistency by adding more milk if necessary to achieve a drizzle-friendly glaze. Drizzle generously over the warm French toast rolls and serve immediately for the best taste experience.
