- For the crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 teaspoon salt
- 3–4 tablespoons ice water
- For the filling:
- 6 slices bacon, chopped
- 1 cup shredded Gruyère or Swiss cheese
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 1 1/2 cups heavy cream
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Make the crust: In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing just until dough comes together.
- Shape into a disk, wrap in plastic, and chill for 30 minutes.
- Roll out dough on a floured surface and press into a 9-inch tart or pie pan. Trim edges and prick the bottom with a fork. Chill for another 15 minutes.
- Preheat oven to 375°F (190°C). Line the crust with parchment and fill with pie weights or beans. Bake for 15 minutes, remove weights, and bake 10 more minutes. Let cool slightly.
- Prepare the filling: Cook chopped bacon in a skillet over medium heat until crispy. Drain on paper towels.
- In a bowl, whisk together eggs, cream, nutmeg, salt, and pepper.
- Spread shredded cheeses and bacon evenly over the crust. Pour egg mixture on top.
- Bake for 35–40 minutes or until the center is just set and lightly golden.
- Cool slightly before slicing. Garnish with chopped parsley.
