Ingredients

Scale

Pie Crust

  • 1 pie crust (store-bought or homemade)

Filling

  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1 can (12 oz) evaporated milk

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for the initial baking stage.
  2. Prepare Crust: Fit the pie crust into a pie pan, pressing it gently against the edges to form a base ready for filling.
  3. Make Filling: In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, cinnamon, nutmeg, ginger powder, salt, eggs, and evaporated milk until the mixture is smooth and well combined.
  4. Fill Pie: Pour the pumpkin filling evenly into the prepared pie crust.
  5. Bake Pie: Place the pie in the oven and bake at 425°F for 15 minutes. Then reduce the heat to 350°F (175°C) and bake for an additional 40-50 minutes until the filling is set but still slightly jiggly in the center.
  6. Cool and Serve: Remove the pie from the oven and cool on a wire rack. Serve chilled or at room temperature topped with whipped cream or vanilla ice cream if desired.

Notes

  • Be careful not to overbake; the center should be just set but slightly jiggly to ensure a creamy texture.
  • Using evaporated milk gives a richer texture compared to regular milk.
  • For best results, allow the pie to cool completely before slicing to help it set firmly.
  • This recipe can be doubled for a larger gathering or adjusted to smaller pies as needed.
