Ingredients

Scale

Cake Ingredients

  • 4 medium ripe bananas (about 2 cups mashed bananas)
  • 1 (8-ounce) can crushed pineapple (with juice)
  • 1 cup sweetened shredded coconut (loosely packed)
  • 3 large eggs
  • 3/4 cup vegetable or canola oil
  • 1 1/2 cups granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (or to taste)

Cream Cheese Frosting Ingredients

  • 8 ounces cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 2 to 2 1/2 cups confectioners’ sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (or to taste)

Garnish (Optional)

  • 1/4 to 1/3 cup toasted chopped pecans

Instructions

  1. Prep Pan: Preheat your oven to 350°F. Prepare a 14-cup Bundt pan by spraying it generously with floured cooking spray or by greasing and flouring it thoroughly. If you don’t have a large Bundt pan, you can use a loaf pan or three 9-inch round cake pans instead but note the baking times will differ accordingly.
  2. Beat Bananas: In a very large bowl or using a stand mixer fitted with the paddle attachment, mash the bananas thoroughly with an electric mixer until smooth.
  3. Add Wet Ingredients: To the mashed bananas, add crushed pineapple (with juice), shredded coconut, eggs, vegetable oil, granulated sugar, brown sugar, vanilla extract, cinnamon, and ground cloves. Beat on medium-high speed until all ingredients are well incorporated.
  4. Add Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet banana mixture and beat just until combined; avoid overmixing.
  5. Bake: Pour the batter into the prepared pan(s), filling no more than two-thirds to three-quarters full. Bake at 350°F. Baking times vary depending on the pan: about 1 hour for a 14-cup Bundt pan, 46–50 minutes for a 12-cup Bundt pan and one 8×4-inch loaf, 25–30 minutes for three 9-inch round cakes, or 60–70 minutes for two 9×5-inch loaf pans. Check doneness by inserting a toothpick – it should come out clean.
  6. Cool: Allow the cake(s) to cool in their pans for 20 minutes. Then, turn them out onto wire racks or cake stands to cool completely before frosting.
  7. Make the Cream Cheese Frosting: In a large bowl or stand mixer bowl fitted with the paddle attachment, beat the softened cream cheese and butter together on high speed until smooth and creamy.
  8. Add Sugar and Flavorings to Frosting: Add 2 cups of sifted confectioners’ sugar, vanilla extract, and salt to the cream cheese mixture. Beat until well combined. Add more confectioners’ sugar if the frosting is too thin until desired consistency is reached.
  9. Frost Cake: Once the cake is completely cooled, apply the cream cheese frosting evenly around the cake, focusing on the top perimeter or as desired.
  10. Garnish (Optional): Sprinkle toasted chopped pecans over the frosting for an additional nutty crunch before serving.

Notes

  • If you don’t own a large Bundt pan, splitting batter into smaller pans like loaf or round cake pans works perfectly but adjust baking times accordingly.
  • Ensure the cake is completely cool before frosting to prevent the frosting from melting.
  • Leftover frosting keeps well in an airtight container refrigerated for several weeks and can be used for other baking projects.
  • To toast pecans: spread chopped pecans on a baking sheet and bake at 350°F for 5-7 minutes, stirring occasionally, until fragrant and lightly browned.
