- 1 sheet puff pastry (thawed)
- 1/2 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup crushed chocolate sandwich cookies (plus more for topping)
- 1 whole chocolate sandwich cookie for garnish
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the puff pastry sheet into a waffle-sized square or rectangle. Bake for 12–15 minutes, or until golden and puffed.
- Meanwhile, in a mixing bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Fold in crushed cookies gently to make cookies & cream mousse.
- Once the puff pastry is cool, pipe or spoon the mousse generously over the top.
- Sprinkle with additional crushed cookies and garnish with a whole cookie in the center.
- Serve immediately for best texture.
