Brownie Batter
- 180 grams (¾ cup) cottage cheese
- 1 large egg
- 45 grams (½ scant cup) cocoa powder
- 80 grams (⅓ cup + 1 tbsp) granular sweetener (can be replaced with coconut sugar or brown sugar)
- ½ tsp baking powder
- ½ tsp coffee powder
- ⅙ tsp salt
Topping (optional)
- Chocolate chips, to sprinkle on top
- Preheat oven and prepare pan: Preheat your oven to 180°C (350°F) and line a 15 cm x 15 cm (7 inch x 7 inch) brownie pan with parchment paper to prevent sticking and make cleanup easier.
- Make brownie batter: In a blender, combine the cottage cheese, egg, cocoa powder, and granular sweetener. Optionally add the baking powder, coffee powder, and a pinch of salt for added flavor and texture. Blend all ingredients until smooth to create a uniform brownie batter.
- Transfer batter to pan: Pour the smooth brownie batter into the prepared pan. If desired, sprinkle chocolate chips evenly on top to add bursts of melty chocolate in the finished brownies.
- Bake the brownies: Place the pan in the preheated oven and bake for 22 to 30 minutes. Check at around 25 minutes; the brownies should be set but still moist in the center. Baking time may vary slightly depending on your oven.
- Cool completely: Remove the brownies from the oven and let them cool fully at room temperature. This step helps the brownies to firm up, making them easier to slice and enhancing their fudgy texture.
- Store the brownies: Once cooled, seal the brownies in an airtight container and store them in the refrigerator. They will keep fresh for up to 4 days, making them a convenient protein-rich snack.
Notes
- Ensure the cottage cheese is well blended for a smooth texture; small curds can affect the consistency of the brownies.
- The baking time may need slight adjustment based on your oven; start checking at 22 minutes to avoid overbaking.
- Chocolate chips on top are optional but add extra flavor and texture.
- Store brownies in an airtight container in the fridge for up to 4 days to maintain freshness.
- This recipe can be adapted with different sweeteners based on dietary preferences.
