Ganache

Instructions

  1. Make the ganache: In a small saucepan over medium heat, combine the heavy cream and white chocolate chips. Stir continuously for 3-5 minutes until the chocolate is melted and the mixture is smooth, making sure it does not boil.
  2. Add flavorings: Remove from heat and stir in freshly grated orange zest, vanilla extract, and freshly squeezed orange juice until fully combined. Allow the ganache to cool at room temperature for 15-20 minutes.
  3. Chill the ganache: Cover the bowl with plastic wrap or a lid and refrigerate for 1-2 hours until firm enough to scoop and roll into balls.
  4. Prepare workspace: Line a baking sheet with parchment paper for placing the truffles.
  5. Scoop ganache: Using a small cookie scoop or tablespoon, portion out the ganache into approximately 1-inch diameter scoops.
  6. Roll truffles: Roll each scoop between your palms to form smooth balls. Dust hands with powdered sugar if the ganache feels sticky.
  7. Place on baking sheet: Arrange the rolled truffles on the parchment-lined baking sheet, spacing them apart.
  8. Refrigerate again: Chill the truffles for another 30 minutes to firm up before coating.
  9. Prepare coating: In a microwave-safe bowl, melt the orange-flavored candy coating or white chocolate in 30-second intervals, stirring between each until smooth. If using white chocolate, add 1 teaspoon vegetable oil to help with melting and dipping.
  10. Cool coating: Allow the melted coating to cool slightly but stay liquid for dipping.
  11. Dip truffles: Remove the truffles from the refrigerator. Using a fork or dipping tool, dip each truffle fully into the melted coating, ensuring it is fully covered.
  12. Remove excess coating: Tap the fork on the edge of the bowl to let excess coating drip off.
