This Creamy Cowboy Soup is a hearty and comforting dish perfect for chilly days. Packed with ground beef, tender potatoes, pinto beans, corn, and diced tomatoes with green chilies, it combines smoky spices and creamy heavy cream to create a rich, flavorful soup that’s both satisfying and easy to prepare.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced

Canned Goods

  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies

Liquids and Oils

  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 tbsp olive oil

Spices and Seasonings

  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Brown the beef: In a large pot, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks to ensure even cooking and no large clumps remain.
  2. Sauté aromatics: Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes soft and fragrant, building a flavorful base for the soup.
  3. Add vegetables and broth: Stir in the diced potatoes, pinto beans, corn, and diced tomatoes with green chilies. Pour in the beef broth and bring everything to a boil to start the cooking process.
  4. Simmer until tender: Reduce heat to low, cover the pot, and let the soup simmer for 20 minutes, or until the potatoes are tender and all flavors meld together.
  5. Add cream and spices: Stir in the heavy cream, smoked paprika, chili powder, salt, and pepper. Let the soup cook for an additional 5 minutes to become creamy and heated through.
  6. Final seasoning and serve: Taste the soup and adjust seasoning if needed. Serve hot, optionally garnished with fresh herbs such as cilantro or parsley for extra freshness.

Notes

  • You can substitute heavy cream with half-and-half or evaporated milk for a lighter version.
  • Adjust chili powder amount based on your heat preference.
  • For a thicker soup, mash a few potatoes while cooking or add a slurry of cornstarch and water before adding cream.
  • Leftovers keep well in the refrigerator for up to 3 days and freeze nicely for up to 2 months.
