This Creamy Cucumber Salad is a refreshing and tangy side dish perfect for warm weather or as a complement to any meal. Featuring thinly sliced cucumbers and red onion tossed in a luscious dressing made from sour cream, mayonnaise, sugar, vinegar, and fresh dill, it’s both easy to prepare and delightfully flavorful. Chilled before serving, it offers a cool, crisp bite with creamy, slightly sweet, and herby notes.

Ingredients

Scale

Vegetables

  • 3 large English cucumbers (about 2 to pounds)
  • 1 small red onion

Dressing

  • 1 cup sour cream
  • 1 cup good quality mayonnaise (do not use “salad dressing” such as Miracle Whip)
  • ⅓ cup sugar (add a bit more if desired)
  • 2 tablespoons white vinegar
  • ¼ teaspoon Morton kosher salt
  • 1 tablespoon chopped fresh dill
  • Ground black pepper (optional, for garnish)

Instructions

  1. Slice the vegetables: Using a sharp knife or mandoline, slice the cucumbers and red onion thinly, aiming for slices about 1/16 to 1/8 inch thick. Place the slices into a large bowl to prepare for dressing.
  2. Make the dressing: In a small bowl, thoroughly mix together the sour cream, mayonnaise, sugar, white vinegar, kosher salt, and chopped fresh dill. Adjust the consistency if desired by adding a splash of extra vinegar, milk, or cream.
  3. Combine salad and dressing: Pour the prepared dressing over the sliced cucumbers and onion. Gently fold the salad to evenly coat all the slices with the creamy mixture.
  4. Chill the salad: Cover the bowl with plastic wrap or a lid and refrigerate the salad for 1 to 2 hours to allow the flavors to meld and for the salad to chill thoroughly.
  5. Serve with seasoning: Just before serving, give the salad a gentle fold, then sprinkle ground black pepper on top if desired for extra flavor and a slight bit of heat.

Notes

  • For evenly sliced cucumbers and onions, use a mandoline slicer if available to achieve consistent thin slices.
  • If you prefer a less sweet salad, start with less sugar and adjust to taste when mixing the dressing.
  • This salad can be prepared a day ahead to enhance the flavors even more.
  • Use English cucumbers as they have fewer seeds and thinner skins, which contribute to the salad’s creamy texture.
  • Black pepper is optional but recommended for a subtle spice contrast.
