Instructions

  1. Cook Pasta: Fill a large pot with water and bring it to a rapid boil over high heat. Add a pinch of salt, then cook the dried pasta according to the package instructions until al dente.
  2. Prepare Sauce: While pasta cooks, melt the salted butter in a large pan or pot over medium heat. Add the minced garlic, stirring until fragrant, then incorporate the gochujang paste, heavy cream, and grated Parmesan. Cook the sauce for 3-4 minutes, stirring constantly to allow it to thicken.
  3. Combine Pasta and Sauce: Once the sauce has thickened, reduce heat to low. Drain the cooked pasta, reserving ¼ cup of the pasta water. Add the pasta to the sauce, then cook together for 1-2 minutes, mixing well. Use the reserved pasta water to adjust sauce consistency as desired.
  4. Serve: Plate the creamy gochujang pasta and top with additional grated Parmesan and fresh or dried parsley flakes if using. Serve immediately while warm.
