Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, black pepper, and dried thyme. Mix gently with your hands until just combined to keep the meatballs tender.
  2. Shape the Meatballs: Using your hands or a cookie scoop, form the mixture into evenly sized meatballs about 1.5 inches in diameter.
  3. Sear the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until they are golden brown on all sides, about 6-8 minutes. They don’t need to be fully cooked at this stage.
  4. Remove Meatballs: Take the seared meatballs out of the skillet and set aside.
  5. Sauté the Mushrooms: In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook for 5-7 minutes until they turn golden and tender. Stir in minced garlic and cook for another minute until fragrant.
