Ingredients

Scale

Chicken

  • 2 large chicken breasts
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Mushroom Sauce

  • 12 ounces mushrooms (cremini or white, sliced)
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy/whipping cream

Instructions

  1. Prepare Chicken: Cut each chicken breast in half lengthwise to create four thinner cutlets. Season both sides of the chicken with salt and pepper, then dredge each piece in flour to coat evenly.
  2. Heat Oil: Add olive oil to a skillet and heat it over medium-high heat until hot and shimmering.
  3. Cook Chicken: Place the floured chicken cutlets into the hot skillet. Cook each side for about 4-5 minutes until they turn golden brown and are mostly cooked through. Remove the chicken from the pan and set aside.
  4. Sauté Mushrooms: Add butter to the same skillet and let it melt. Add the sliced mushrooms and Italian seasoning. Cook the mushrooms, stirring occasionally, until the liquid from the mushrooms evaporates and they develop a nice sear, about 5-7 minutes.
  5. Remove Mushrooms: Take the cooked mushrooms out of the pan, placing them on the same plate as the chicken.
  6. Create Sauce Base: Add minced garlic, chicken broth, lemon juice, and Dijon mustard to the pan. Stir well to dissolve the mustard. Let the mixture simmer and reduce by half over 3-4 minutes, intensifying the flavors.
  7. Add Cream and Combine: Pour in the heavy cream, then return the cooked chicken and mushrooms back to the pan. Simmer together for about 5 minutes until the chicken is fully cooked through and the sauce thickens slightly. Taste and adjust seasoning with salt and pepper as needed.

Notes

  • For best results, use chicken breasts that are similar in size to ensure even cooking.
  • If you prefer a thicker sauce, allow it to simmer longer or add a small slurry of flour and water before the cream.
  • This dish pairs wonderfully with mashed potatoes, rice, or buttered noodles.
  • To reduce calories, substitute heavy cream with half-and-half or a creamy non-dairy alternative.
  • Make sure not to overcrowd the pan when searing chicken to achieve a nice crust.
