Ingredients

Scale

Salmon and Seasoning

  • 1.5 lbs salmon fillets
  • Salt and black pepper to taste

Sauce

  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the ideal temperature for baking the salmon and sauce together.
  2. Season Salmon: Pat the salmon fillets dry with paper towels to remove excess moisture, then season both sides generously with salt and black pepper.
  3. Sear Salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Place the salmon fillets skin-side up and sear for 2-3 minutes until golden brown, then flip and sear the other side for another 2-3 minutes. Remove the salmon from the skillet and set aside.
  4. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Cook Tomatoes: Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften and release their juices.
  6. Add Cream and Spice: Stir in the heavy cream and red pepper flakes if using. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce slightly thickens.
  7. Wilt Spinach: Add the fresh spinach to the skillet and stir until it wilts and integrates into the sauce.
  8. Add Parmesan Cheese: Stir in the grated Parmesan cheese until the sauce becomes smooth and creamy. Taste and season with additional salt and pepper as needed.
  9. Return Salmon to Skillet: Nestle the seared salmon fillets back into the creamy sauce, ensuring they are partially submerged.
  10. Bake: Transfer the entire oven-safe skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  11. Serve: Remove from oven and serve immediately, spooning extra sauce over the salmon for maximum flavor.

Notes

  • This recipe uses an oven-safe skillet; if your skillet is not oven-safe, transfer the sauce and salmon to a baking dish before baking.
  • If you prefer less heat, omit the red pepper flakes.
  • For a lighter version, substitute heavy cream with half-and-half, though the sauce will be less rich.
  • Leftovers can be refrigerated for up to 2 days and gently reheated on the stovetop.
