- 2 medium Russet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- Optional: 1/4 teaspoon smoked paprika or garlic powder for flavor
- Wash and scrub potatoes well. Slice very thinly using a mandoline or sharp knife (about 1/16 inch thick).
- Soak slices in cold water for 20–30 minutes to remove excess starch.
- Drain and pat completely dry using a clean kitchen towel.
- Preheat air fryer to 350°F (175°C).
- In a bowl, toss the potato slices with olive oil, salt, and any optional seasoning.
- Arrange slices in a single layer in the air fryer basket (you may need to do this in batches).
- Air fry for 12–15 minutes, flipping halfway through, until golden and crispy. Watch closely toward the end to avoid burning.
- Remove and cool on a wire rack. Repeat with remaining slices.
- Serve immediately with your favorite dipping sauce or store in an airtight container.
Notes
- Use a mandoline for consistent thin slices, which helps even crisping.
- Soaking is essential for removing starch and achieving maximum crispiness.
- Store leftovers in an airtight container to maintain crunch.
