Crispy Air Fryer Potato Chips

Thinly sliced potatoes air-fried to crispy, golden perfection with minimal oil. A light, crunchy, and healthier alternative to traditional potato chips—ideal for snacking or entertaining.

Ingredients

Scale
  • 2 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • Optional: 1/4 teaspoon smoked paprika or garlic powder for flavor

Instructions

  1. Wash and scrub potatoes well. Slice very thinly using a mandoline or sharp knife (about 1/16 inch thick).
  2. Soak slices in cold water for 20–30 minutes to remove excess starch.
  3. Drain and pat completely dry using a clean kitchen towel.
  4. Preheat air fryer to 350°F (175°C).
  5. In a bowl, toss the potato slices with olive oil, salt, and any optional seasoning.
  6. Arrange slices in a single layer in the air fryer basket (you may need to do this in batches).
  7. Air fry for 12–15 minutes, flipping halfway through, until golden and crispy. Watch closely toward the end to avoid burning.
  8. Remove and cool on a wire rack. Repeat with remaining slices.
  9. Serve immediately with your favorite dipping sauce or store in an airtight container.

Notes

  • Use a mandoline for consistent thin slices, which helps even crisping.
  • Soaking is essential for removing starch and achieving maximum crispiness.
  • Store leftovers in an airtight container to maintain crunch.
