Ingredients

Scale

For the Tofu Tenders

  • 1 block Extra Firm Tofu (Drained and pressed)
  • 1 cup All-Purpose Flour (Can substitute with gluten-free flour)
  • 1/4 cup Cornstarch
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Paprika Powder (Optional)
  • 3/4 cup Water (Adjust as necessary for batter consistency)
  • 1 cup Panko or Japanese Breadcrumbs
  • 2 tablespoons Neutral Oil for Coating (For brushing or spraying)

For the Honey Mustard Sauce

  • 1/4 cup Agave or Maple Syrup (Can use any liquid sweeteners)
  • 1/4 cup Yellow or Dijon Mustard (Choose based on personal taste)
  • 2 tablespoons Neutral Oil
  • 1 pinch Salt
  • 1 dash Pepper

Instructions

  1. Prepare Honey Mustard Sauce: In a small bowl, whisk together neutral oil, agave or maple syrup, and your choice of yellow or Dijon mustard. Season with a pinch of salt and a dash of pepper to taste. Set this sauce aside for later use.
  2. Press and Slice Tofu: Drain the extra firm tofu and wrap it tightly in a clean kitchen towel. Press the tofu for about 10 minutes to remove excess moisture. Once pressed, slice the tofu into 1-inch wide strips, preparing them for coating.
  3. Make Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and optional paprika powder. Gradually add water while whisking to create a smooth, pancake-like batter consistency. Adjust the water amount if necessary to ensure a coating that sticks to the tofu strips.
  4. Coat Tofu Strips: Dip each tofu strip into the prepared batter, ensuring it is fully coated. Then transfer the strip into the panko breadcrumbs, pressing gently so the breadcrumbs adhere evenly on all sides.
  5. Preheat Oven and Prepare Tofu for Baking: Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper or a silicone baking mat. Arrange the coated tofu strips on the tray, leaving some space between pieces. Lightly brush or spray the strips with neutral oil to enhance crispiness during baking.
  6. Bake Tofu Tenders: Bake the tofu tenders in the preheated oven for 30-35 minutes. Flip them halfway through the baking time to promote even browning and crispiness on all sides.
  7. Brush with Honey Mustard Sauce and Finish Baking: After the initial baking, remove the tray from the oven and brush all the tofu tenders generously with the prepared honey mustard sauce. Return the tray to the oven and bake for an additional 5-8 minutes to allow the sauce to set and slightly caramelize on the tenders.
  8. Serve: Remove from the oven and serve the crispy baked honey mustard tofu tenders warm. These pair wonderfully with fresh salads, dipping sauces, or your favorite side dishes.

Notes

  • Pressing the tofu is essential to remove excess moisture which helps achieve a crispier texture when baked.
  • You can substitute all-purpose flour with gluten-free flour to make the dish gluten-free.
  • Adjust the amount of water in the batter to get the right consistency; it should be thick enough to coat the tofu but not too runny.
  • Use panko breadcrumbs for extra crunch, but regular breadcrumbs will also work if panko is unavailable.
  • The honey mustard sauce can be adjusted in sweetness or tanginess by varying the amount of maple syrup or mustard used.
  • This recipe is vegan if using maple syrup or agave and suitable mustard; check that all other ingredients are plant-based.
