- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 3 cloves garlic, minced
- ½ cup fresh parsley leaves
- ½ cup fresh cilantro leaves
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp baking powder
- Salt and pepper to taste
- Oil for frying
For Serving:
- 4 flatbreads or pita breads
- 1 cup lettuce leaves
- 1 cup diced tomatoes
- ½ cup tahini sauce
- Drain soaked chickpeas and pat dry. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.
- Shape mixture into small patties.
- Heat oil in a skillet over medium heat. Fry falafels in batches for 3–4 minutes per side until golden brown and crispy. Drain on paper towels.
- Warm the flatbreads. Layer lettuce and diced tomatoes, then place falafels on top.
- Drizzle generously with tahini sauce, fold, and serve immediately.

- Ensure chickpeas are well drained and dry to avoid soggy falafels.
- Serve with extra tahini or hot sauce for added flavor.
- Falafel mixture can be refrigerated for up to 24 hours before frying.
