- For the Fries:
- 4 large russet potatoes, cut into thin strips
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh parsley
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- For the Spicy Aioli:
- 1/4 cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon hot sauce (or to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon juice
- Preheat oven to 425°F (220°C).
- Soak cut potatoes in cold water for 30 minutes, then drain and pat completely dry.
- Toss fries with olive oil, salt, pepper, and rosemary. Spread on a baking sheet in a single layer.
- Bake for 35–40 minutes, flipping halfway, until crisp and golden.
- In the final 5 minutes of baking, sprinkle with minced garlic. Bake until garlic is fragrant but not burned.
- Mix all aioli ingredients in a small bowl and chill until ready to serve.
- Once fries are done, toss with fresh parsley and serve hot with the spicy aioli.
Notes
- For extra crispiness, use convection bake if your oven allows.
- Use garlic-infused oil for deeper flavor without risk of burning garlic.
- Yukon Gold potatoes can be used for a creamier texture.
